Thanks to the holiday weekend, today was like a second Sunday for my friends and a substitute Sunday for me (I work in the hospital most Sundays). Obviously we had to seize this opportunity and turn it into a brunchin’ kind of morning. We’re talking good chats, beautiful (and delicious!) food, a couple small messes, and time well spent. Below, I’ll share the recipes we used for our brunch so that you can incorporate them into your next brunch get together!
Last week, Nick and I tried these Breakfast Stuffed Avocados and loved them. So at this morning’s brunch we tweaked the recipe a bit and added some sautéed peppers and onions, chopped up MorningStar breakfast links, and exchanged the breakfast potatoes for tater tots. The outcome was a filling and delicious item that I’m planning to incorporate into more of Nick and I’s breakfasts.
These Whole Wheat Blueberry Muffins have been a staple in our home for a couple of months now. Nick and I recently switched over to using whole wheat flour in our baking and I was searching for a muffin recipe that was specifically designed for whole wheat flour. This recipe has been a real winner! The hearty whole wheat gets your day started right and blends perfectly with the sweet pops of blueberry.
We added yogurt, Striples (vegetarian “bacon” substitutes), and breakfast links to round out the already huge meal. We also made smoothies for an added health benefit as well as some more sweetness to complement the savory. While I don’t have a recipe for the exact smoothie I made this morning, I’m hoping to put together some easy and delicious smoothie recipes and post them here on the blog later. So stay tuned for that!
Likely, the most important piece of the meal was these dear friends of ours. They’ve become part of my inner circle within this special community I’ve become a part of. In fact, I’d go so far as to say that they were the best part of this brunch. I’m so grateful for these friends who spent a slow morning creating delicious food, laughing together, and connecting with me.
